  • I made Cajun steak the other night. Cubed steak, browned. Tomato sauce and diced tomatoes, green peppers. And Cajun seasoning. Served over rice. 

    It was good but pretty tomato-y. Scott does not eat onions so did not put any in. Neither of us is crazy about okra so did not use that either. But definitely needed to cut the tomato-y flavor some. Maybe next time I will add some zucchini.

    When you say diced tomatoes do you mean fresh? I like to buy stewed tomatoes in a can (but I am a big fan of tomatoes)

    Last night I made coconut rice for the first time - 1 cup of water, 1 cup of coconut milk and 1 cup of Basmati rice. I put ground coriander and just a hint of curry powder plus a dash of turmeric and a Bay leaf. I wanted to put in a cinnamon stick but Andy poo pooed that idea.

    I liked the way it turned out. At the end I mixed in sauteed onions that had been cooked with some frozen green peas until they thawed out.

    2 cups flour
    1-1/4 cups sugar
    1 teaspoon soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/4 teaspoon allspice
    1/4 teaspoon ground cloves
    1/2 cup oil
    2 eggs
    1/3 cup milk
    2 cups rhubarb cut into 1" pieces

    Sift flour, sugar, soda, salt and spices. Combine eggs, oil and milk in a bowl and beat thoroughly. Add sifted dry ingredients. Fold in cut up rhubarb and pour into greased 9 x 13 pan. Bake at 350 F for 50 minutes.


    Optional:
    The recipe didn't call for it, but it doesn't seem like a coffee cake to me unless it has the brown sugar, butter, and cinnamon topping.

    It's a bit early in the year for us up here but by end of May we should have some rhubarb coming back in the garden - thanks!

    You fry the chicken skin from the thighs first until it's crispy then use that as a garnish

  • I see nobody has posted here recently and it appears I have been absent for a while (sorry!)

    Today we are having chicken cooked in the slow cooker with carrots, celery, garlic, onion, bay leaf and spices (oh yes and one shallot)

    Basically it's just a stewed chicken; I've never tried cooking a whole bird in one of these before. It takes six hours on high (plus it does not heat up the house like the oven would)

    Thanks! Not sure if it's because I married a chef or not. I was always quite keen on baking; Just get an easy cook book and give it a whirl Kurben - who knows? you may become a gourmet!
