I think I added 21 minutes to my life by eating that.
Here is what's in it.
chickpeas
cuke
bell pepper (I use red)
red onion
kalamat olivers
crumbled feta
kosher salt
freshly ground pepper
capers
avocado
Dressing:
EVO
white wine vinegar
lemon juice
freshly chopped parsley
red pepper flakes
kosher salt
freshly ground black pepper
The original recipe didn't have the capers or avocado in it, I added those. It's so good.
Those "kalamat olivers" are super hard to find in the store. sheesh.
And probably wouldn't... olives = 🤮
