  • Today I did an experiment (sort of) - started with two cans of Campbell's extra chunky hot and spicy chili

    Normally I would not start a recipe with an already made can of chili but we had no ground beef.

    Then I added a can of barbecue beans (Heinz)

    Put this in the slow cooker with one diced red onion that I'd sauteed in a frying pan with butter.

    Here's the weird part: we had a tenderloin that had been cooked with mushrooms and onions etc. so I chopped that up fine and sauteed that as well (it already had some pork fat that had been rendered out)

    At least I think that was what it was - maybe Andy had cooked it with butter.

    Final step was to add a large can of stewed tomatoes and that was pretty much it. I did find seven packets of Heinz ketchup in the pantry and threw those in (I really need a face palm emoji)

    It smells good so hopefully Josh and I will enjoy it - Andy never eats chili.

    I didn't add any extra spices so I'll have to taste it later to see if it needs any.

    @Neesy - bummer on the chili concoction.  But that's a funny story.

    I made Noni's Gravy on Sunday. I spent 6 hours in the kitchen. It's good, and it make 5 gallon ziplocks full of sauce - so I'll be using it for months. 

    In addition to all the chopping of the onions, carrots, and garlic, there's 3 pounds of ground chuck and 3 pounds of Italian sausage, and then after you add all the spices and tomatoes and wine (some God awful Lambrusco!) and such, you add an entire chuck roast to it and simmer for 8 hours - then shred up the roast. Intense scullery duties, but worth it. I have to do it in 2 stock pots and stand on a stool in front of the stove to see inside- I think I'm shrinking.

    Today I have to do the Italian spinach - which is mostly my father in law's recipe, but I've tweaked it to be even better. My secret ingredient: nutmeg. I wish I could have you all over for Christmas Eve dinner. Sadly, it will be just our immediate family and my mother in law (oh joy.)
